- Mix the flour, vanilla and remaining La Perruche Cassonade in a bowl, then add the cold butter in pieces, mixing with your fingertips to obtain a grainy paste.

- Pour the peaches into an ovenproof dish, sprinkle the crumble batter over the fruit and bake for around 25-30 min, or until the crumble is golden brown.
- Leave to cool slightly before serving at room temperature.
